Open yeast dough pie with strawberries

For lovers of yeast baking, we offer a recipe for an open strawberry pie. A very juicy, aromatic berry filling, soft airy dough and a ruddy tender crust - a piece of such a delicacy will ideally complete any meal. We will also show in detail how to beautifully decorate the edges of the cake - you get perfect decorative sides.

To prepare the dough, pour flour, salt, granulated sugar, vanilla sugar and dry yeast into a bowl. Stir the dry mixture.

Pour half an egg, warm milk and melted butter into the dry mixture. Knead the dough.

The mass turns out to be soft, elastic, not sticking to the hands. Roll a ball out of the dough, grease it with vegetable oil, put it in a bowl and put it in a warm place for proofing for an hour and a half. The volume of the mass should double.

While the dough is coming up, prepare the filling. We wash the strawberries in cool water, remove the sepals, dry the berries well on a towel from excess moisture. Cut the strawberries in half if the berries are too large. Put the strawberries in a saucepan, cover with granulated sugar. We put the saucepan on the stove and continuously stir the berries with a spatula. Juice will come out soon. Bring the mass to a boil and cook for one and a half minutes.

Mix starch and water in a separate container.

Pour the starch mass into the strawberries, mix. Bring to a boil and cook for one minute. Pour the strawberry mass into a bowl, cover with cling film in contact and leave to cool at room temperature.

Roll out the matched dough into a circle with an approximate diameter of 33 centimeters. Place a round plate with a smaller diameter in the center. Cut the peeking edges of the dough into even strips along the entire circumference, as in the photo.

We remove the plate, wrap the strips on top of each other in the form of a pigtail, as in the photo.

Put the decorated dough on a baking sheet covered with oiled parchment. Leave for proofing for thirty to forty minutes. After that, grease the edges with a silicone brush with the remaining half of the egg.

Preheat the oven to a temperature of 180 degrees. We put the future pie on the middle level of an already hot oven and bake for approximately forty-forty-five minutes. Baking times may vary slightly depending on the specific oven. We focus on the fact that by the end of baking, the cake should noticeably increase in volume and brown well. We take the finished product out of the oven and let it cool completely.
