To knead the shortbread dough faster and more conveniently, you can use the planetary mixer. But not everyone has one, but almost every owner of a hand blender can find a small food processor, and it is perfect for these purposes. Remove the butter from the refrigerator at least half an hour before cooking to soften it. Cut it into smaller pieces, add the icing sugar and add only the yolks from the eggs.

Whisk everything until smooth, you should get a smooth, creamy mass.

Add the sifted flour in parts and beat until you get an oily crumb, at this stage you do not need to achieve uniformity of the dough.

Place the crumbs in a baking dish and tamp, spreading gently and quickly with your hands to prevent the butter from actively melting.

Pin the bottom of the sand base with a fork, cover it with a sheet of parchment and pour in the load. This can be rice, lentils, peas, or beans. It will no longer be possible to cook them in the future, but you can save them and reuse them when preparing other bases from shortcrust pastry. Remove the crust and bake in the oven for 15 minutes at 180̊ С.
