Grilled vegetables

There is nothing more delicious and simpler than vegetables cooked on the grill. This simple dish will ideally complement kebabs, baked fish, or form the basis of a vegetable stew.

Wash and dry the vegetables. Cut the courgettes and eggplants into slices no more than one centimeter thick.

Cut the tomatoes in half.

Bell pepper, cut in half, peel off partitions and seeds. If the peppers are very large, cut them into quarters.

Peel the garlic, chop it with a press and mix with olive oil, add salt and spices to taste.

Transfer the chopped vegetables to a large bowl, cover with the marinade, and stir.

Place the vegetables on a wire rack. Place a wire rack over well-heated coals and cook the vegetables for 5-10 minutes on each side.

Transfer the finished vegetables to a common dish, sprinkle with sesame seeds and chopped herbs if desired.
