Make a fire in advance and let the coals burn out. Wash eggplants, bell peppers, hot peppers and tomatoes thoroughly in running water and pat dry with paper towels. Place the prepared vegetables on skewers. If the vegetables are large and heavy, use two skewers each so that the vegetables cook evenly when turning.

Roast vegetables until charred, then remove from skewers. Place the eggplants in a saline solution for a few minutes to get rid of the bitterness, and then remove the skin. Peel the bell peppers and hot peppers from the skin and core. Remove the skin from the tomato as well. Put the peeled vegetables in a deep container.
