Most people's favorite side dish for any kebab is grilled vegetables. There are a lot of recipes for vegetables cooked on a fire, I want to share my favorite recipe for vegetables marinated in soy sauce.

Make a fire in advance and let the coals burn out. Wash the eggplants thoroughly and pat dry with paper towels. Cut off the ends and cut into slices 1.5-2 centimeters thick.

Rinse the zucchini thoroughly and dry in the same way as eggplant, cut off the ends and cut into slices 1.5-2 centimeters thick. Choose young squash or zucchini. They cook quickly and do not need to be peeled.

Wash the bell peppers thoroughly and pat dry with paper towels. Remove seeds and cores. Cut the peeled peppers into several large pieces.

In a small bowl, combine vegetable oil, soy sauce, and balsamic vinegar. Peel the garlic and rinse under water, grate on a fine grater or pass through a press. Add to marinade and mix thoroughly.

Put prepared vegetables in a deep container and cover with marinade. Stir well and leave to marinate for about 10-15 minutes at room temperature.

String the pickled vegetables on skewers so that they do not fall off.

Put the skewers with vegetables on the grill. Fry on both sides until golden brown, turning occasionally. It will take about 10-12 minutes. Cooking time depends on your vegetables and charcoal.
