Cabbage vegetable stew

Vegetable stew is a wonderful dish with hundreds of recipes. The main thing is that all stew recipes are correct, since you can combine absolutely any vegetables with each other. Our recipe is based on cabbage and squash, which are simple and popular seasonal vegetables.

Rinse the cabbage, pat it dry and chop very finely with a food processor or knife. Send it to fry over moderate heat.

Dice the young courgette and add to the cabbage. If you have a middle-aged zucchini, then it must first be peeled from the skin and from the middle.

In a separate skillet, sauté peeled and finely chopped onions and carrots. The onions should be golden brown and the carrots should soften slightly.

When the vegetables in the pan are almost done, add finely chopped or puréed tomatoes to them. Replacing tomatoes is also permissible for tomato paste.

Five minutes before the end of cooking, add garlic, peeled and minced with a press, to your stew. Stir the dish and let it cook until tender.

After the stew is ready, add spices to it (to taste and desire) and leave under the lid to brew for about five to seven minutes.
