Italian vegetable stew

Italian style vegetable stew is a traditional dish for Sicily. It is easy to prepare and can be served hot or cold. This stew will serve both as an independent dish and as an original hearty side dish.

Rinse the eggplant thoroughly, cut into pieces, add salt and mix. We leave the vegetables as they are.

Chop the onions and celery, peel the carrots and cut them into thin slices. Fry vegetables in olive oil until light golden brown.

Scald the tomatoes, peel and grind. We spread the gruel to the vegetables in a pan, add tomato paste here. Stir and simmer for 5 minutes.

Put the eggplants in the pan. Salt, pepper, add chopped garlic, basil. Pour in balsamic vinegar and olive oil, stir and continue to simmer for 20-25 minutes. Add water if necessary.
