Vegetable stew is a dish that can be served not only as a full-fledged light dinner or lunch, but also as a side dish. The recipe presented to your attention is not a classic one, as it combines several types of mushrooms, zucchini and potatoes. By the way, it is thanks to potatoes that the dish becomes more satisfying and high-calorie. In any case, the preparation of stews does not imply adherence to strict rules for the selection of ingredients: the qualitative and quantitative composition can be adjusted based on their own tastes and preferences.

First of all, we will deal with the preparation of potatoes. It must be washed, peeled. Rinse again, put in a saucepan, pouring water. We send the pan to the fire. Meanwhile, cut the washed and dried zucchini into cubes. in the event that the zucchini is not young, remove the soft core with seeds from it and remove the skin. Grate the washed and peeled carrots. Peel the onion and cut into small cubes. We send all chopped vegetables to a preheated pan, poured with a small amount of vegetable oil.
