For lovers of all kinds of vegetable dishes, I want to offer a wonderful recipe for vegetable stew with zucchini, eggplant and potatoes, cooked in a slow cooker. The dish turns out to be juicy, healthy and aromatic. It is served on its own or used as a side dish for meat and fish dishes.

First, prepare all the ingredients you need.

Wash the eggplants thoroughly, peel them if desired. Put the prepared eggplants in slightly salted cold water and leave for a while to release the bitterness.

Rinse the potatoes under cold water and then peel them with a vegetable peeler. Cut the peeled potatoes into medium-sized cubes. Wash the zucchini well, then dry and also cut into medium-sized cubes. If you are using marrow that is not too young, peel it of seeds and core, and then cut into cubes.

Rinse the bell peppers thoroughly under water, dry, and then remove the seeds and core, and cut into cubes. Wash the carrots well, and then peel them with a vegetable peeler and cut into slices.
