Vegetable pilaf in a slow cooker

For vegetable pilaf in a slow cooker, you will need rice, onions, carrots, bell peppers, tomatoes, garlic, herbs and oil. We add salt and spices based on our own taste preferences. The pilaf will turn out to be rich, juicy and at the same time quite light, so there is no meat or animal fat in it.

Pour in such an amount of vegetable oil into the bowl of the multicooker so that it covers the bottom with a layer of one to one and a half centimeters. Install the bowl in the multicooker and turn on the "Fry" mode. We heat the oil until hot. Peel the onions, rinse, dry and cut into small cubes. Pour the onion into the heated oil, fry it for a couple of minutes until transparent, not forgetting to stir.

Peel the carrots, wash, dry and rub on a coarse grater. Alternatively, you can cut it into thin strips. Put the carrots in a bowl next to the onions, stir and continue to fry with stirring for a couple of minutes, until the carrots are soft.

The next step is bell pepper. We wash it, cut out the stalk and remove the seed content. Cut the pulp into squares and pour them into a bowl with carrots and onions. We fry for three to four minutes.

The next ingredient is tomato. Wash, dry, cut into large pieces. We put the tomato in the multicooker bowl, mix with the general frying. Simmer for three to four minutes. Finally, add salt and black pepper to taste.

At the same time, we prepare rice: we put it in a colander and rinse it under running water until transparent. Put it on top of the fried vegetables in a bowl. Pour in such an amount of hot water so that it covers the rice by one and a half to two centimeters. We add to taste, considering that the rice will "take away" some of the salt. We close the multicooker with a lid and turn on the "Pilaf" mode.

After the time of the "Pilaf" program has expired, turn off the multicooker. Peel the garlic and pass it through a press. Wash the greens, dry them and finely chop them with a knife. Add greens and garlic gruel to the cooked pilaf, mix gently and gently and close with a lid. Let it brew in heating mode for another ten minutes.
