Usually squash boats are stuffed with meat fillings, but who said that you can't cook them without meat? It turns out a delicious and tender version of a vegetable dish that tastes like a stew.

Wash the zucchini, peel and cut in half lengthwise. Remove the pulp and seeds with a teaspoon, forming boats. The main thing is not to break the workpieces. Grease a baking sheet with vegetable oil, put the zucchini on it and put in the oven, preheated to 180 degrees, for 20 minutes.

Pour boiling water over the tomato to remove the skin.

Peel the onion, finely chop and fry until golden brown in oil.

Grate the carrots on a coarse grater, cut the eggplants into small cubes. Instead of eggplant, you can take 4 mushrooms. Cut the tomato into large cubes. Do the same with the pulp of the zucchini. Fry the zucchini pulp, carrots, eggplant, tomato and finely chopped garlic in oil. Fry for 15 minutes, stir in the onion.
