Classic pancakes

Classic pancakes are prepared with milk. The dough must be beaten well and saturated with air, then the pancakes will have their own branded "biscuit" crumb. It is worth taking care of a high-quality frying pan with a non-stick coating, because you need to fry them without oil or with a minimum amount of it. It is then that the crust of classic pancakes is not crispy, but soft and velvety.

Break eggs into a large bowl, add granulated sugar and salt. Beat all the ingredients with a mixer at high speed until a lush, almost white foam is obtained. It is important to beat the egg base with high quality, then the pancakes will have a "correct" biscuit-soft core and will evenly increase in volume during frying.

Heat the milk slightly in the microwave or in a ladle on the stove. Pour milk into the egg foam with a stream, then add vegetable oil. Mix everything into a homogeneous mixture with a mixer at slow speeds.

Sift the flour into a bowl with a liquid mixture.

After the flour, add baking powder and vanilla sugar. Beat everything together with a mixer at medium speed until you get a smooth dough of medium density.

The finished dough has the consistency of condensed milk. This consistency is convenient for forming a pancake: the dough is poured into a frying pan in the form of a thick circle, but not a plump pancake or thin pancake.

Place the non-stick frying pan on the stove and heat until hot. Before frying the first portion of pancakes, lightly grease the hot pan with vegetable oil using a silicone brush. Pour the dough into a hot pan with a spoon in the shape of a circle. To get the shape as close to a circle as possible, the dough must be poured by lowering the spoon vertically with its nose down.

For a couple of minutes, fry the pancake on medium temperature, until bubbles appear on the surface and the gloss of the raw dough disappears. The pancake will grow slightly in volume. Using a thin spatula, turn it over to the other side.
