Pancakes on the water

Pancakes are small, tender American pancakes that taste like a biscuit. There are a lot of ways to prepare them: dough for pancakes is prepared with milk, kefir, cocoa, chocolate, banana. Today we will cook pancakes in water - it turns out to be an excellent version of pancakes from a minimum of ingredients.

Separate the yolk from the protein. We send the protein to the refrigerator for now. Beat the zheltov well with a whisk or mixer. Add water to the yolk (add regular, filtered water) and mix well.

Add salt, vanillin to the liquid mixture, wind the flour with baking powder. Knead everything well with a spoon.

Add olive oil to the dough. We take the protein out of the refrigerator, add sugar to it and beat it with a mixer until fluffy. Then add the whipped mass to the dough. Gently stir the dough from bottom to top so as not to precipitate the protein.

We heat the pan, put 3 tablespoons of dough in the center of the dry pan, you do not need to tilt the pan, the dough will spread by itself. Fry the pancake for a couple of minutes, when the dough is slightly baked on top, characteristic holes appear and the dough becomes dull - turn the pancake over to the other side and fry it until golden brown.
