If you ditch wheat flour, which contains gluten, and refined white sugar, you can pamper yourself with delicate PP pancakes on rice flour with the addition of bananas. The taste of the dish does not suffer from such a substitution, but its usefulness increases.

Divide the eggs into whites and yolks. Stir the whites and beat in a fat-free bowl until stable peaks.

Ripe bananas (you can even slightly overripe), peel, cut into pieces and puree with the addition of yolks. Add fermented baked milk mixed with soda to them. Fermented baked milk can be replaced with sour cream or natural yogurt. Sift flour into the mass, add sweetener. Beat everything with a mixer.

Pour the mixture into the whipped egg whites and stir gently from top to bottom.

Preheat a non-stick skillet, reduce heat. Add a drop of coconut oil. Pour the dough into pancakes with a tablespoon.
