Easter cottage cheese with condensed milk and candied fruits

When preparing Easter, it is very important that the food is fresh and of high quality. Both the cottage cheese itself and eggs, butter and sour cream. Additionally, we will add condensed milk, not boiled. It gives a very pleasant creamy aftertaste and makes the consistency of the finished dessert softer. Do not forget about candied fruits or raisins - Easter is tastier with them and looks more festive.

Rub the fatty cottage cheese through a fine sieve to provide the Easter with a delicate uniform texture. In a separate bowl, grind the yolks with granulated sugar and vanilla white. Add condensed milk, fat sour cream, softened butter to the yolk mass and beat well with a mixer until completely homogeneous.

Add the yolk mixture with condensed milk to the grated cottage cheese, mix well. We wash the raisins in hot water, dry them and pour them into the total curd mass. Next, add candied fruits. If they are large, pre-cut them into smaller pieces.

Finally, beat the egg whites with a mixer at high speed until a stable foam is obtained. Stir in the protein foam into the curd mass. We cover the paste box with gauze folded in two or three layers. We put the bowl in a deep plate so that the whey flows into it. Fill the mold on top of the cheesecloth with the prepared curd mass.

We lift the hanging edges of the gauze up and fold it on top of each other, thus closing the curd mass. We put a load on top: for example, a can of water. We put the structure in the refrigerator for twelve hours - the dessert should thicken, the excess serum will drain into the bowl.

From the finished Easter, we remove the load, unfold the cheesecloth and carefully turn the dessert onto a dish. Decorate Easter with candied fruit slices from above and along the edges.
