Ingredients

Cooking process

step 1 out of 9
Pour warm milk into a bowl for kneading dough, add half the amount of flour specified in the recipe, add a bag of dry yeast, 2 tablespoons of sugar and mix everything well. This will be our dough for the test. Put the dough for 30 minutes in a warm place so that the yeast starts to work and the dough goes well.
step 2 out of 9
Divide the eggs into whites and yolks. Place the yolks in a separate bowl. Add the rest of the sugar and butter softened at home temperature to the yolks, and rub everything well until smooth.
step 3 out of 9
In a separate bowl, use a mixer to beat the egg whites into a stable foam.
step 4 out of 9
Transfer the crushed yolks, whipped whites into the risen dough and mix gently. Then add the rest of the flour (be sure to sift the flour on a sieve) and knead the dough well. Cover the dishes with the dough with a napkin and put them in a warm place for 2 hours so that they fit well.
step 5 out of 9
During this time, fill the raisins with hot water for 20 minutes and then rinse. You can wipe off excess moisture with a tissue. After 2 hours, when your dough has come up and doubled in volume, put the raisins to it, stir so that the raisins are evenly distributed in the dough, and leave for another 20 minutes for proofing.
step 6 out of 9
Put the prepared dough in special and oiled tins for baking cakes, filling them with dough no more than 1/3 of the volume, so the cakes will rise when baking.
step 7 out of 9
Bake the cakes in an oven preheated to 180 ° C for 40-50 minutes. Use a wooden stick to check the baking is done. The stick must be dry.
step 8 out of 9
Remove the baked cakes from the oven and cool slightly. Prepare the icing during this time. To do this, in a separate bowl, beat the whites with a mixer with powdered sugar and lemon juice.
step 9 out of 9
Spread the cakes with the prepared icing immediately, because it quickly hardens. Decorate the cakes with pastry sprinkles.
