Easter cake on kefir without yeast

I propose to cook a delicious and tender Easter cake on kefir without yeast. The crumb texture is airy and light. For the filling of pastries, I used dried apricots and raisins. But you can replace your favorite dried fruits or use candied fruits.

Prepare dry ingredients for the cake. Combine in a deep container.
step 2 out of 5
Melt the butter in the microwave or water bath. Combine liquid ingredients in another container and mix thoroughly.

Sort dried apricots, rinse, dry and cut into small pieces. Sort out the raisins, rinse and dry. Pour into a bowl of dry ingredients along with the chopped dried apricots and mix thoroughly. Then add the liquid ingredients and stir until smooth.
step 4 out of 5
Grease paper molds with a little vegetable oil. Divide the dough and fill the paper forms half way. Place molds with dough in the multicooker bowl. Close the lid of the appliance and start the Baking program, cooking time - 1 hour. After the beep, leave the cakes with the lid closed for 20 minutes.
step 5 out of 5
Check the readiness of the cake with a wooden skewer and carefully remove it from the multicooker. Cool by turning on its side. Prepare the protein glaze. Whisk the powdered sugar and chicken protein for about 5 minutes on medium mixer speed. Spread the resulting mass on the top of the cakes and decorate with pastry sprinkles, let set and serve.
