Easter cake with nuts and dried fruits

Kulich is Easter bread, without which it is simply impossible to imagine a festive table. I propose to cook together with me a traditional kulich from yeast dough.

In order to emphasize the taste of dried fruits, soak them for 24 hours in alcohol (preferably in cognac / rum). The next day, remove the dried fruits from the liquid and lay them on a paper towel to absorb excess moisture.

Let's prepare the dough. First heat the milk to 40 degrees and pour it into a deep bowl. Then add yeast and mix well. Add granulated sugar and pre-sifted flour and mix well again.

Cover the container with cling film and put in a warm place for 40 minutes. You can also put the dough in an oven preheated to 40 degrees.

After a while, the dough should approximately double.

To prepare the dough, beat 3 eggs into a bowl, then separate the yolks from 3 more eggs (use the whites for the glaze). Add granulated sugar and salt and beat until fluffy.

Then gently add the matched dough into the egg mixture and mix well.

Add some of the flour and knead the dough. Then add the orange zest and stir again thoroughly. After that, add a little more flour and knead the dough with a spoon until the moment possible.

Transfer the dough to a floured table and knead, adding the remaining flour.

Add lightly melted butter and stir into the dough (this will take at least 15 minutes).

Place the dough in a deep bowl greased with vegetable oil. Cover with a towel and leave in a warm place for several hours.

The dough should rise 2-3 times.

Next, transfer the dough to a work surface, add dried fruits and knead until the dried fruits are distributed equally throughout the dough.

Divide the resulting mass into molds, filling them by one third. Then let the dough rest in a warm place under a towel for 40 minutes.

We send the matched dough into an oven preheated to 180 degrees for about 30-50 minutes.

To check if the cakes are baked, use a toothpick: if it is dry, then the products are ready. Pay attention to the top: if it burns, cover the product with foil.

Now let's do the icing. To avoid burning, cook it in a water bath. To do this, take a saucepan filled with water, put it on fire and bring to a boil.Then, reducing the heat, place a container (larger diameter) with proteins and sugar in the saucepan. Beat this mixture until stiff peaks.

Spread the tops of the cooled cakes with the resulting glaze.

Use a knife or pastry spatula to create unusual bumps and patterns.

Next, burn the glaze with a burner or a lighter with a large torch until a caramel shade appears. The final stage is the decor of your choice.
