Today I propose to use a wonderful recipe and cook an appetizing dish, which I often cook for my family for lunch. Pasta Carbonara, cooked with bacon and sour cream, turns out to be incredibly tasty and aromatic. Cook and you won't regret it.

Pour a large amount of cold water into a deep saucepan, put on fire and bring to a boil, salt well.

Cut the bacon into thin slices. You can use any bacon - raw, uncooked or smoked-boiled.

Heat the pan well over moderate heat, add the chopped bacon and, stirring constantly, fry until crisp.

Place the fried bacon on a plate lined with paper towels to absorb excess fat.

Rinse the chives thoroughly in cool water, dry and chop with a sharp knife.

In the pan where the bacon was fried, put the required amount of sour cream, add the chicken yolks, stirring constantly with a whisk, bring the sauce to thicken over low heat.

Put the required amount of tagliatelle in boiling water. Cook until al dente for the time indicated on the pasta package. Any kind of pasta can be used instead of tagliatelle.

Add the fried bacon to the thickened sauce, season with salt and pepper. Stir and bring to a boil.

Drain the boiled tagliatelle through a colander or sieve. Send the finished pasta to the pan. Stir the dish thoroughly.

Grate the Parmesan cheese on a fine grater. Any hard cheese can be used instead of Parmesan. Put chopped cheese and chives in a dish. Mix well.
