Pasta with porcini mushrooms

In the preparation of spaghetti pasta, champignons are usually used, but porcini mushrooms are in no way inferior to them in taste and aroma. It is not necessary to purchase Parmesan for the dish, you can also do with regular hard cheese.

Defrost porcini mushrooms at room temperature. Set aside half separately - they will be used when serving. This half must be fried in olive oil in a frying pan until golden brown, add salt and ground black pepper. Cook the spaghetti, pre-salting the water. The proportion is 100 grams. spaghetti 1 l. water and 10 gr. salt. Cook the spaghetti over the pasta for 1 min. less than what is written on the pack.

Peel and finely chop the onion, fry in a pan with a little olive oil until it becomes transparent. Add the second half of the porcini mushrooms, fry for a couple of minutes. Add a pinch of salt and stir.

Pour in half of the heavy cream and let it boil over a little. Then pour in the second half, put the boiled spaghetti and simmer for another 2 minutes. Before serving, sprinkle with grated Parmesan, add chopped mint leaves and sprinkle with freshly ground black pepper.
