Liver cake with semolina

You can make a delicious cake from the liver. Delicate dough is made from chicken liver and semolina, and as a layer we use sautéed vegetables, which give the cake juiciness, piquancy and aroma. Such a cake will not only successfully serve as an appetizer, but can also become a hearty festive dinner.

We thoroughly wash the chicken liver, cut off all the veins and blood vessels. We pass the liver through a meat grinder or grind it with a blender into a homogeneous mass. Add kefir or milk to the crushed liver in the specified volume.

Pour semolina to the liver, mix.

We leave the mixture of liver and semolina for half an hour so that the cereals can soften before baking.

Peel and cut onions into thin half rings. Heat some vegetable oil in a frying pan and put the chopped onion into it. Fry the onion on the medium temperature of the stove until transparent, stirring occasionally.

While frying the onions, rinse and peel the carrots. We rub it on a coarse grater and add to the onion pan, mix.

Saute the mixture of onions and carrots at low temperature until the vegetables are soft and begin to brown a little. At the end of cooking, add salt and black pepper to your taste. Let the vegetables cool to a warm state.

Add salt and ground black pepper to the present liver mass, mix. The form in which the cake will be baked is well coated with vegetable oil. It is recommended to use a mold about 26 centimeters in diameter so that the height of the finished cake is adequate. Pour half of the liver dough into the prepared form, level.

Lay out the sautéed vegetables on top of the dough, trying to distribute them in an even layer around the entire perimeter.

Pour the remaining half of the liver dough onto the vegetables, level the surface. Preheat the oven to 180 degrees. Place the cake pan on the middle level of the hot oven and bake for twenty minutes.

While the cake is baking, prepare the filling. To do this, mix the egg, mayonnaise and sour cream in a small bowl. Stir by hand with a whisk until completely homogeneous.

Pour the resulting smooth mass over the liver cake in an even layer and continue to bake for another half hour. In this case, the temperature must be reduced to 160 degrees.

The finished cake has a well-browned crust. We take it out and the oven, let it cool slightly and serve warm or cold. Garnish with chopped herbs when serving.
