Young cucumbers always actively go into seaming, but with overgrown ones, questions often arise. These cucumbers are already tougher, less crunchy and generally not as tasty. But if you properly prepare such specimens and marinate with a spicy composition, you get a very tasty preparation that is not inferior to the taste of young brethren. It is important to observe proportions and cooking techniques.

Rinse the cucumbers thoroughly and fill them with cold water. We leave for a few hours to soak, so that the fruits become juicier.

Dry the prepared cucumbers and cut off the tips on both sides. We cut each cucumber into cubes three to four centimeters long and one to two centimeters thick. If the seeds are too soft, they must be cut and not used.

Prepare the marinade mixture in a separate bowl. To do this, mix granulated sugar, salt, black pepper, dry mustard powder and garlic passed through a press.

Pour refined vegetable oil and vinegar into a bowl, according to the indicated proportion. We mix everything thoroughly.

We wash the greens and dill inflorescences, dry them and chop finely with a knife. Add chopped dill to a container with cucumber cubes and fill in the prepared marinade. We mix everything with our hands, trying to evenly distribute the pickling composition and herbs over all the cucumber slices.

We leave the cucumbers for an hour and a half at room temperature so that they let the juice and marinate.

After the specified time has elapsed, lay out the cucumbers in sterile dry jars, fill with marinade with juice and cover with lids. We put the cans to sterilize for twenty minutes and roll up with sterile lids. Let the jars cool completely and put them in a cool and dark storage place.
