Shortbread dough is famous for its maximum ease of preparation, which even a beginner can do. Plus, small crumbs are a reliable basis for the berry filling and allow you to preserve not only a decent appearance, but also the taste of the pie. By combining sour currants with sweet shortbread dough, you get the most balanced taste.

Sift premium wheat flour, baking powder into a bowl and add 100 grams of sugar. All components are thoroughly mixed together.

Cut the frozen butter into small cubes and add to a bowl with loose ingredients. We grind everything with our hands until a not very small crumb is formed.

Separate the yolks from the proteins and add to the resulting crumb. Proteins, in turn, are set aside for a short time. At this stage, knead the dough and form a lump that is as homogeneous in consistency as possible. We wrap it in plastic wrap and refrigerate it in the refrigerator for 20-30 minutes.

Remove the red currants from the branches and rinse well. Then we transfer the berries to a deep container and crush with any suitable object. You can use a special pusher or rolling pin.

We grind the mixture, which resembles mashed potatoes in consistency, through a sieve, in order to eventually get a liquid without cake, homogeneous in its consistency.

After half an hour, remove the chilled lump of dough from the refrigerator and release it from the film. Then we sprinkle the work surface with a small amount of flour and roll out our dough on it to sizes that will fit into our mold.

Transfer the prepared dough to a baking dish, evenly distributing it over the entire surface. At the same time, we preheat the oven to 200 degrees and send the dough to bake for 10-15 minutes.

To prepare the filling, beat the whites until stable peaks form, then add the remaining 100 grams of sugar and starch to them. Beat all the contents for another five minutes. Then we combine the protein mixture with berry juice and stir until a homogeneous light pink mass.

Remove the browned crust from the oven and put the berry filling on it. We reduce the heating of the oven to 180 degrees and bake the cake for 15-20 minutes.

After this time, we open the oven and check the readiness of the cake. From above it is covered with a light pleasant crust, and the filling resembles a soufflé. It can be served with tea immediately after preparation or cooled down.
