A pleasant combination of tender, soft, with a light berry sourness of sour cream filling and crispy shortbread dough will not leave anyone indifferent to this cake, and thanks to the moisture in the filling, the cake will not turn out too tough.

Sift 500 grams of flour through a fine sieve into a deep bowl. Add salt and baking powder and stir.

Cut the pre-softened butter into small cubes or slices, add to the dry mixture and grind with a fork until crumbs.

Next, add 125 grams of sour cream to the dough and knead the dough with a spatula. When it begins to form into a homogeneous ball, dust the work surface with flour and continue kneading the dough with your hands. Then form a ball out of it, wrap it in plastic wrap and refrigerate for 10 minutes.

Meanwhile, in a separate bowl, combine the sugar, egg and vanilla sugar. This can be done with a hand whisk or mixer, or with an ordinary fork, the main thing is to achieve a uniform consistency.

Add the remaining flour to the mixture, about two tablespoons, and one tablespoon of starch. These ingredients will allow the filling to hold its shape and resemble a pudding in consistency. Also add sour cream and stir everything until smooth, getting rid of all flour lumps.

Rinse the cherries, dry and remove the seeds. If the berries have been frozen, let them sit in a colander to drain the juice. Add the starch and stir gently, being careful not to damage the fruit. This is necessary so that less juice is released during baking, and the one that does stand out will thicken.

Roll out the chilled dough into a layer 5-7 millimeters thick, transfer it to a baking dish and tamp, forming sides that are approximately the same along the entire perimeter.

Bake the pie in the oven at 180̊C for 45-50 minutes. Sand sides by this time will have to brown, and the filling should rise slightly and dry on top.
