Shortcake with cherries and cottage cheese

This pie is not as cloying as with an all-berry filling. The light taste of cottage cheese with a slight sourness is diluted with the bright taste of sweet cherry, which makes the cake not so heavy. It will appeal to those who do not really like very sweet desserts.

Ingredients

Cooking process

step 1 out of 9
Remove the butter from the refrigerator beforehand to melt and soften. Cut it into small cubes, transfer to a bowl and add vanillin and sugar. Stir all the ingredients with a fork until a homogeneous mass is obtained, similar in consistency to a cream.
step 2 out of 9
Beat the egg into the butter mass and stir until smooth.
step 3 out of 9
In a separate container, combine the dry ingredients and, sifting through a fine sieve, add in portions to the oil base. Stir until smooth with a spatula, form a ball, tighten with plastic or cling film and refrigerate for 10-15 minutes.
step 4 out of 9
In the meantime, prepare the curd filling. Place all ingredients in a deep bowl.
step 5 out of 9
Beat everything with a blender until a homogeneous mass is obtained, similar in consistency to kefir. In the absence of a blender, the ingredients can be mixed with a whisk or fork, but in this case, it is better to grind the curd through a sieve.
step 6 out of 9
If necessary, remove the seeds from the cherries and leave in a colander for 10 minutes to drain off excess juice.
step 7 out of 9
Roll the chilled dough between two sheets of parchment into a uniform layer, transfer to a baking dish and tamp. You can cut off the excess dough with a knife and make a decoration out of them, or you can form a high board.
step 8 out of 9
Pour the curd mass into the sand base and put the cherries. You can wait a couple of minutes for the berry to release its juice and stir the filling slightly to form pink and white streaks.
step 9 out of 9
Preheat oven to 180̊C and bake the pie for about 40 minutes. Cooking time will depend a lot on your oven, so be guided by the colors of the sides. If they are noticeably browned, the dish can be taken out.
Bon Appetit!
