The tandem of sweet apple with sour lingonberries is a tasty and harmonious filling for homemade pies, especially from shortcrust pastry, although it can be yeast, kefir or flaky. The dough is kneaded by hand or using kitchen devices. Any lingonberry is suitable, even dried, and a little starch is added to it to bind the berry juice. The filling is fragrant on its own, but you can add a little vanilla or cinnamon to it.

First, prepare all the ingredients for the cake. Then knead the shortbread dough. To do this, pour wheat flour through a sieve into a bowl for kneading dough, add salt and one spoonful of sugar to it, mix everything. Cut a piece of cold butter into small cubes, transfer to flour and chop everything with a knife until fine crumbs.

Pour 1 tablespoon of ice water into the flour crumbs quickly so that the butter does not soften and the dough turns out to be crumbly, stir. Gather the kneaded dough in a lump, wrap it in a piece of cling film and put it in the refrigerator for 30 minutes.

During this time, prepare the berry and fruit filling. Rinse the apples well and remove the seeds from the core. Chop half of the apples into small cubes and the rest into thin slices. Then pour the lemon juice over the slices so that they do not darken.
