Pie with shortcrust pastry and frozen currants can be cooked throughout the year as a wonderful homemade pastry for tea and even for a festive table. The shortbread dough is dense and is not saturated with berry juice, which makes the cake beautiful in the cut, only it is desirable to work with it quickly, otherwise it will lose its shortbreadiness and become tough. It is best to knead the dough with a food processor, but you can also use a whisk. Defrost the currants in advance and drain all the juice.

Keep the butter at home temperature for a while so that it becomes soft and easily crushed with a spoon.

Put the butter in a food processor bowl or a bowl for kneading dough, add the amount of sugar indicated in the recipe and beat until a light airy cream is obtained. In a food processor, beat first at low speed, then at maximum.

Then add chicken eggs to this mass one by one and continue beating until the mass is homogeneous.

Then transfer the dough to a floured countertop, knead a little with your hands, roll it into a bun and then flatten it to a disk. Wrap the dough in a piece of cling film and refrigerate for 30 minutes. The dough mixed in this way can be stored in the refrigerator for a day.

After this time, you can start baking the cake. Put thawed currant berries in a separate bowl, add starch and sugar to them and stir with a spoon so that the starch completely covers the berries.
