Yeast dough is a little more capricious compared to the same shortbread dough, for example. However, the pies from it are very soft, juicy and tender, and the filling can be replaced with any other, not even sweet.

To prepare the filling, first sort out the currants, rinse under running water and lay out on a towel to dry. It is better to take black currants, because white and red contain more water and the cake may not bake. Pour the dried berries into a deep bowl, add sugar and grind everything until smooth. Place the grated berries in the refrigerator while preparing the dough.

Heat the milk slightly, add sugar and yeast and mix thoroughly. Cover the container with a towel on top and leave for 15-20 minutes to activate the yeast. When the foam cap appears after the specified time, add a pinch of salt and stir again.

Add softened or melted butter to the yeast mixture and stir. Do not be alarmed if there are oil lumps in the liquid, this is normal, later they will knead into the dough. Break the eggs next in a bowl and mix everything together as well.

The flour must either be sieved beforehand, or added to the liquid base in parts, passing through a sieve. Introduce in small portions, stirring thoroughly each time. Be careful at the end, because you may need a little more flour, or less. It is very important not to oversaturate the dough with flour, as this will make it less likely to rise.

As a result, you will have to get a soft dough that practically does not stick to your hands. Cover it with a towel and put it in a warm place for 1-1.5 hours. If it comes up very actively, wrinkle it 1-2 times.

Grease a baking dish with a little oil. Separate a small piece from the dough to decorate the cake, and stretch the rest to shape, forming small sides with your hands. Remove the currants from the refrigerator and spread in an even layer on the bottom of the mold.

Make decorations from the remaining dough. For example, a small braid for the sides and thin strips to create a lattice. Place everything on top of the berries and secure.
