Kefir pie with frozen apricots

Delicious pies are made with frozen apricots. The fruits do not lose their characteristic taste, remain juicy and give flavor to baked goods. Before putting frozen apricots in the pie, be sure to defrost them and drain off the excess liquid that will be released in the process.

Place the apricots in a sieve and let them defrost. Excess liquid should drain off.

To prepare the dough, put soft butter, regular sugar and vanilla sugar in a bowl, break the eggs and pour in kefir. Beat with a mixer until smooth. Add the sifted flour along with the baking powder, knead the homogeneous dough with a mixer.

Grease the cake pan with vegetable oil. You can also cover it with oiled parchment - this will later simplify the process of removing the finished cake from the mold. Pour the kneaded dough into the mold, align it along the bottom.

We send the pie into an oven preheated to 180 degrees, bake for about thirty to thirty-five minutes, until a golden crust appears. The finished product should rise noticeably. We take the cake out of the oven, sprinkle it generously with powdered sugar and let cool. Then we take the baked goods out of the mold, put them on a plate and cut them into portions.
