The beauty of this pie is that all the ingredients are interchangeable: for example, you don't have fresh apricots - you can take canned ones, no sour cream - you can replace them with heavy cream and the list goes on. The butter must first be removed from the refrigerator and when it softens a little - cut into small cubes.

It's time to preheat the oven to 180 degrees, and while it is warming up: grease the mold a little with butter and sprinkle with semolina, shake off the excess.

Add 200 grams of granulated sugar to the creamy cubes and beat with a mixer with a fluffy airy consistency, then break two eggs and beat again.

Add sifted flour, salt and starch to the resulting mass. Immediately knead the shortbread dough and spread it on the prepared mold, leveling the base and shaping the edges with your fingers.

We wash the fruits under running water, dry them with paper towels and cut them into two parts, taking out the bone. We put the apricot filling on the dough, cut up, sprinkle with a few tablespoons of sugar on top.
