During the apricot harvest season, you can delight your family with delicious pastries with these juicy aromatic fruits. One of the simplest and most affordable recipes is kefir pie. The dough is kneaded quickly and easily, and, perhaps, the most laborious stage is the extraction of pits from apricots.

We immediately process the apricots: rinse them thoroughly, dry them. We cut each fruit lengthwise into two halves and manually remove the bone. We then cut each half into two or three parts. Thus, we prepare all the apricots.

To prepare the dough, melt the butter on the stove or in the microwave until it is liquid. Break eggs into a bowl, add melted butter, kefir, granulated sugar, salt, soda, vanillin. Beat everything together with a whisk or mixer until smooth.

Sift flour into the resulting mixture, knead a homogeneous dough. The mass turns out to be smooth, rather thick, about like sour cream.

Grease the baking dish with vegetable oil. If the mold is silicone, then you don't need to lubricate it. Pour half of the kneaded dough into the prepared mold, and put the apricots on top, skin side up. Fill with the second half of the dough and repeat the layout of the fruits. If you have time and desire, you can lay the apricots on top neatly in a circle. Or you can simply place the fruits on the dough in a chaotic manner - the taste will not change from this. We put the form in an oven preheated to 180 degrees, bake for thirty-five - forty minutes until golden brown.

We take the finished cake out of the oven, let it cool slightly and remove it from the mold. Cool completely, cut into portions and serve.
