The combination of fresh cottage cheese with red currant berries makes the pie even more nutritious and, best of all, not very high in calories. Thus, a slice of such a dessert will be very useful not only in the morning, but also during a late dinner. Having prepared such a delicacy, you will definitely surprise your friends and loved ones.

Cut the frozen butter into small cubes and add to a container with sifted wheat flour and salt. Mix the entire contents slightly.

Then put a bowl with a “knife” attachment in a food processor and transfer wheat flour and butter into it. We interrupt the ingredients into small crumbs by setting the "pulse" mode.

For the next stage, rinse the lemon well and rub it on a fine grater. Add the resulting lemon zest to the fine crumbs and interrupt for a couple of seconds. Then break the egg into the flour mass and briefly turn on the combine for another couple of seconds to knead a homogeneous dough.

Remove the lump of dough from the bowl of the food processor and knead it by hand. Then we wrap it in cling film and put it in the refrigerator for about half an hour, so that all the components grab and become a single whole.

At this time, let's move on to preparing the curd filling. Combine sour cream and cottage cheese together, add granulated sugar to them and beat with a mixer until a creamy mass and smooth texture is obtained. We cool the curd filling in the refrigerator for about 20 minutes.

After 30 minutes, remove the dough from the refrigerator, and cover the work surface on which we will roll it out with a thin layer of wheat flour. The rolled dough should be about 4 mm thick and about 25 centimeters in diameter. We put this layer in the prepared form so that the edges hang a little from the sides.

Dip the currants in a bowl with starch and sugar, and then add to the curd mass. Mix the filling well and put it in a mold with dough, trying to distribute it as evenly as possible over the entire surface.

Roll out the remaining dough and cut it into not very thin strips, which we then spread on a layer with filling, forming a grid out of them. On top of the strips, using a kitchen brush, apply milk at room temperature and bake the cake in an oven preheated to 180 degrees for 40-50 minutes.
