It is possible to create masterpieces from yeast dough, especially with skillful hands. Such a fluffy cake with a very interesting shape, which you create yourself, will be the highlight of any table, from festive to everyday. Also, after trying this recipe, you can use different fillings and even mix berries.

We will immediately prepare all the ingredients that we will use in the cooking process. We sort out the red currants, rinse and put them in a colander so that there is no excess moisture on the berries.

Sift wheat flour into a separate container and add dry yeast to it. We mix all the components well and set aside for a while.

For now, let's prepare the whey. Pour kefir into a saucepan and heat over low heat. Cook kefir until curdled.

Then turn off the heat, remove the pan from the heat and add vegetable oil, salt and granulated sugar to the resulting whey. Mix everything very thoroughly and add to the flour mixture. Immediately knead the dough to a uniform consistency. If necessary, if the dough turns out to be thin, add a little more flour.

We form a lump from the dough, which we subsequently cover with a towel. Leave the yeast dough to rise in a warm room without drafts for at least half an hour.

Put the prepared red currant berries in a container with starch and mix well.

After 30 minutes, we check the state of the test. Due to the reaction of the yeast, it should be increased in volume. Divide the raised lump of yeast dough into two parts in a percentage ratio of 70:30.

We roll out most of the dough into a layer, about 0.5 centimeters thick, which we then put into a mold. We distribute the prepared berries over the entire surface, while retreating from the edge by one centimeter. Sprinkle the filling with granulated sugar.

We also roll out the remaining dough and cut into equal strips, from which we form a lattice. We form a relief rim along the edges of the workpiece. Leave the cake to stand in a warm place for about half an hour.

Before sending the cake to bake, pour two tablespoons of water into the egg yolk and stir well. With the resulting mixture, grease the grate and the side so that they are beautifully browned. In parallel with this, we preheat the oven to 180 degrees.

Initially, we bake the cake for about 15 minutes, covering the blank with foil. Then remove the foil and continue the baking process until fully cooked. This may take 30 to 40 minutes. We check the readiness of the cake with a skewer or a toothpick; it should remain dry at the exit from the dough.
