Chanterelle pie

In addition to their excellent taste, chanterelles are good because they do not lose their yellow-orange color during heat treatment. This makes dishes with their participation beautiful and bright, while bringing gastronomic and aesthetic pleasure.

Sift the flour. Pour flour into a blender bowl, add salt and diced butter, grind all ingredients into small crumbs. Add ice water, you can replace it with ice cubes, grind everything again with a blender. The dough should be crumbly but pliable.

Form the dough into a thick disk, wrap it in plastic wrap and refrigerate for 30-40 minutes.

While the dough is chilling, add the filling. Peel the chanterelles, wash and cook in salted water for 15-20 minutes. Remove the husk from the onion, cut into thin half rings and fry until tender. Then add the chanterelles to the onion and fry until the moisture evaporates.

In a bowl, combine cream and eggs, add grated cheese, Provencal herbs and salt. Mix well.

Take the dough out of the refrigerator, roll it into a layer no more than 0.5 centimeters thick.
