Pie with cottage cheese and blueberries from shortcrust pastry in the oven

Bright tricolor cake - such pastries are not only tasty, but also pleasing to the eye with their attractiveness. Brown layer - shortcrust pastry with cocoa, white layer - curd filling, purple layer - blueberries. All together provide the cake with a harmonious taste and pleasant juiciness. It is better to serve such pastries well cooled: the curd layer becomes denser, more stable, the shortbread dough becomes more crumbly, and the berries do not spread.

Ingredients

Cooking process

step 1 out of 6
Knead the shortbread dough. Mix dry ingredients: flour, baking powder, salt, icing sugar and cocoa powder. Grate the cooled butter on a coarse grater or cut into small pieces and add to the resulting dry mixture. Rub the mixture with butter with your hands until you get a crumb.
step 2 out of 6
Then add yolk and sour cream to the crumb. Knead shortbread dough with your hands. We form a bun out of it, separate about a third and put this small part into the freezer.
step 3 out of 6
Grease the baking dish with a small amount of vegetable oil or cover it with oiled parchment. Place the remaining dough in the prepared form and distribute it with your hands along the bottom and edges, forming boots.
step 4 out of 6
Cooking curd filling. To do this, mix eggs, protein, granulated sugar, vanilla sugar, cottage cheese, sour cream and cornstarch in a bowl. Mix everything together with a mixer or hand blender until completely homogeneous. We sort out the blueberries, rinse and dry well on a towel from residual moisture.
step 5 out of 6
On shortcrust pastry in a mold, distribute the curd mass into an even layer. Sprinkle blueberries on top. We take out the dough from the freezer and rub it on a coarse grater. The resulting shavings are immediately distributed in an even layer over the blueberries. Preheat the oven to a temperature of 180 degrees. We put the cake tin on the middle level and bake for forty-forty-five minutes.
step 6 out of 6
We take the finished product out of the oven, remove it from the mold, transfer it to a dish and be sure to let it cool completely. After cooling down, cut the pie into portions and serve.
Bon Appetit!
