Bright tricolor cake - such pastries are not only tasty, but also pleasing to the eye with their attractiveness. Brown layer - shortcrust pastry with cocoa, white layer - curd filling, purple layer - blueberries. All together provide the cake with a harmonious taste and pleasant juiciness. It is better to serve such pastries well cooled: the curd layer becomes denser, more stable, the shortbread dough becomes more crumbly, and the berries do not spread.

Cooking process
Cooking curd filling. To do this, mix eggs, protein, granulated sugar, vanilla sugar, cottage cheese, sour cream and cornstarch in a bowl. Mix everything together with a mixer or hand blender until completely homogeneous. We sort out the blueberries, rinse and dry well on a towel from residual moisture.
On shortcrust pastry in a mold, distribute the curd mass into an even layer. Sprinkle blueberries on top. We take out the dough from the freezer and rub it on a coarse grater. The resulting shavings are immediately distributed in an even layer over the blueberries. Preheat the oven to a temperature of 180 degrees. We put the cake tin on the middle level and bake for forty-forty-five minutes.
