Pie with cottage cheese and blueberries on kefir

The recipe will appeal to those who do not like to bother with kneading dough and multi-stage baking. This dough kneads quickly, especially with the "participation" of the mixer. Pour the dough into a mold, scatter blueberries over the surface and send to the oven. Everything. In half an hour, the kitchen will be filled with the aroma of homemade pie and you can invite your household to a tea party. The pie turns out to be porous, soft, airy, somewhat reminiscent of a biscuit, only noticeably juicier.

Ingredients

Cooking process

step 1 out of 6
To prepare the dough, break the eggs into a bowl, add granulated sugar, salt and vanilla sugar.
step 2 out of 6
Beat everything together with a mixer at high speed until a fluffy light foam is obtained. It is important to beat the egg base well so that the cake is really fluffy. Then add kefir, fatty soft cottage cheese and continue to beat until smooth. Ideally, use a soft pasty cottage cheese, it will give the desired moisture, tenderness and will not appear as grains in the texture of the cake. The mass will settle noticeably, this is normal.
step 3 out of 6
Sift the flour together with soda and pour it into the resulting egg-kefir mass. Using a spatula, knead a homogeneous dough without lumps - in consistency it will resemble thick sour cream.
step 4 out of 6
We grease the baking dish with vegetable oil or cover it with oiled parchment - this will then simplify the process of extracting the finished cake. Pour the prepared dough into a mold, align.
step 5 out of 6
We prepare blueberries: sort out, rinse in running water, dry on a towel. If you are using frozen blueberries, you do not need to defrost them first. Pour the berries evenly onto the surface of the dough in a mold.
step 6 out of 6
Preheat the oven to a temperature of 180 degrees. We put the form with the dough on the middle level of an already hot oven and bake for approximately thirty-five to forty minutes. The cake should grow up and brown beautifully. If there is any doubt about the readiness, we check with a wooden skewer - it should come out of the cake dry. We take the finished pie out of the oven and be sure to let it cool before serving. The surface can be decorated with powdered sugar.
Bon Appetit!
