Sorrel and cottage cheese pie

I suggest making a delicious snack cake with sorrel, herbs and cottage cheese on a crispy shortbread dough. The pie turns out to be very aromatic due to the use of various herbs. The ingredients for the juicy pie are the most common.

Ingredients

Cooking process

step 1 out of 16
Remove the butter from the refrigerator in advance and leave at room temperature. Sift the required amount of premium wheat flour into a deep bowl. Add half a teaspoon of salt. Add softened butter.
step 2 out of 16
Rub the ingredients thoroughly with your hands, you should get a mass similar to bread crumbs.
step 3 out of 16
Break a room temperature chicken egg into the dough.
step 4 out of 16
Pour in the pre-warmed milk. Stir lightly.
step 5 out of 16
Add ground turmeric. This will give the dough a beautiful golden color.
step 6 out of 16
Collect the dough in a lump without kneading for a long time. Place in a plastic bag or tighten the container with cling film and refrigerate for 30-40 minutes.
step 7 out of 16
Rinse the sorrel thoroughly under running water and dry with paper towels. Then chop not quite finely.
step 8 out of 16
Heat the pan well and lay out the chopped sorrel, stirring constantly, simmer over low heat for several minutes. The sorrel will decrease in volume and change its color to a paler one. Remove from heat and let cool.
step 9 out of 16
Put the cottage cheese in a deep container, break the chicken eggs.
step 10 out of 16
Add salt and provencal herbs to the filling. Mix thoroughly until smooth.
step 11 out of 16
Wash green onions, parsley and dill thoroughly in cool water, dry and chop finely. Add the curd mass and chopped herbs to the stewed sorrel. Stir well until smooth.
step 12 out of 16
Grease a baking dish with a little vegetable oil and lightly dust with wheat flour, spreading it over the entire surface. Remove the dough from the refrigerator, roll it into a layer about 1 centimeter thick, put it in a baking dish, forming the sides.
step 13 out of 16
Spread the filling evenly.
step 14 out of 16
Carefully cut off the free edges of the dough.
step 15 out of 16
Shape the dough into a decor and place it over the filling.
step 16 out of 16
Preheat the oven to 200 degrees. Place the baking pan and bake for 20-25 minutes. Then carefully remove it from the oven. Cool slightly and transfer to a clean kitchen towel. Cover with the loose edges of a tea towel and leave to cool for 20-25 minutes. Serve in portions with sweet tea.

Bon Appetit!
