Pilaf with raisins and dried apricots in a slow cooker

Pilaf with the addition of dried fruits takes on a completely different sound: it becomes more juicy, aromatic, pronounced sweet and sour notes appear. Such pilaf cannot be called dessert, because, even despite the absence of meat, the dish turns out to be hearty, nutritious and great for lunch. Those who are fasting or vegetarian will love this pilaf. We suggest using not white rice, but red - pilaf will become even more unusual. If you prefer the usual white rice, of course, use it.

Ingredients

Cooking process

step 1 out of 8
Rice must be washed well in order to free the grains from starch and ensure good crumbling of the future pilaf. We do this in a colander under running water or in a bowl, changing the portions of water for rinsing.
step 2 out of 8
The water should be completely clear by the end of the rinse. After rinsing, fill the rice with cold water and leave for fifteen to twenty minutes.
step 3 out of 8
Peel the onions, rinse, dry and cut into small cubes. We clean, wash, dry the carrots, cut them into small cubes or, as an option, three on a coarse grater.
step 4 out of 8
Three head of garlic between the palms to remove the upper husk, then wash, dry and cut off the lower part. The teeth should stick together.
step 5 out of 8
Dried apricots, raisins, prunes thoroughly rinse in warm water, then squeeze with your hands and dry with a towel.
step 6 out of 8
Pour the specified amount of odorless vegetable oil into the multicooker bowl. Put onions in it, then carrots. The next layer is washed and soaked rice (drain the water from soaking beforehand). Put dried apricots, raisins, prunes, barberries and goji berries on the rice. Sprinkle everything on top with salt and pour in hot water in the specified amount.
step 7 out of 8
We close the device with a lid and select the “Pilaf” program for forty-five minutes. We press "Start". When the mode finishes working, turn off the multicooker, and leave the pilaf to brew a little. Do not open the lid for another five to ten minutes.
step 8 out of 8
After that, open the lid of the multicooker, and gently stir the pilaf with a spatula - all layers should mix. We lay out the finished pilaf on plates and immediately serve it hot.
Bon Appetit!
