Vegetable season is about to start, and I want to bring you a funky quick and easy tomato snack recipe for the winter. Korean style tomatoes are prepared with Korean carrot seasoning, the amount of flavoring seasoning can be adjusted according to your taste preference.

Wash the carrots thoroughly, peel with a vegetable peeler and grate on a coarse grater. Stir the grated carrots into the Korean carrot seasoning. Rinse tomatoes and herbs thoroughly under running water and then dry. Peel the tomatoes and cut into slices. Peel the garlic, chop finely or pass through a press.
Combine granulated sugar, salt, sesame oil, chopped garlic and vinegar in a deep bowl. Stir the dressing thoroughly and set aside. Chop the greens with a knife. Wash the jars thoroughly and sterilize in the microwave. Fill sterile jars completely with tomatoes, carrots and herbs, alternating layers.
