Wash the carrots thoroughly, peel with a vegetable peeler and grate on a coarse grater. Rinse the bell peppers thoroughly under running water, remove the seeds and core, cut into half rings. Peel the garlic, grate on a fine grater or pass through a press. Peel the onions and cut into thin half rings.
