We offer you another option for harvesting tomatoes for the winter - with the addition of herbs, hot peppers and spices. The variety of tomatoes for this preservation option is best selected fleshy and not too juicy, since during sterilization all the moisture from juicy tomatoes can go into the marinade. Dense varieties retain their shape, marinate well in a spicy dressing, resulting in an excellent cold appetizer suitable for any table.

We wash the cans for the preparation with baking soda, rinse thoroughly with running water and put the neck down in a cold oven on the grill. We sterilize the jars at 110-120 degrees for 7-10 minutes. Then we take the jars out of the oven with clamps and leave them for 15-20 minutes to cool slightly. We put the tomatoes in sterilized jars together with the dressing, placing them tightly up to the very neck.
Cover the jars with boiled lids and place them in a deep saucepan with a cotton napkin at the bottom. Pour water into a saucepan so that it reaches the shoulders of the jar, and put it on medium heat. Bring the water in a saucepan to a boil, then reduce the heat and sterilize the tomatoes for 15-20 minutes.
After the time has elapsed, we take out the jar of tomatoes with the help of clamps from the pan and seal it tightly with a lid. Turn the jar upside down, cover it with a warm blanket or a terry towel and leave it to cool completely at room temperature. Then we remove the tomatoes for storage in a dark, cool place.
