Tomatoes with citric acid in a 2-liter jar for the winter

Once upon a time, 2-liter cans were a rarity, but now they are for every choice and it is convenient to make preparations for the winter for a small family in them. In such a jar, you can put up to 1 kg of tomatoes by weight or about 13 medium fruits. If the tomatoes are large, then more than 7 pieces will not fit in a 2-liter jar. We cook tomatoes with citric acid instead of vinegar, and they turn out to be tasty, dense, without a specific vinegar aftertaste, and the marinade will be light. We marinate without sterilization and using the 3-fold filling method.

Ingredients

Cooking process

step 1 out of 6
At the bottom of a clean and dry 2-liter jar, put the sprigs of dill washed with water, peeled garlic and a few pieces of hot pepper (this is to taste). We wash the tomatoes and put them compactly in a jar on top of the spices. Tomatoes, so that the skin does not burst, can be pricked at the stalk with a fork or toothpick.
step 2 out of 6
Boil clean water and pour boiling water over the tomatoes in a jar. Then cover the jar with a lid and leave for 8 minutes. After this time, pour out the water from the jar and re-fill it with fresh boiling water for 5 minutes and also pour it into the sink.
step 3 out of 6
While the tomatoes are infused and partially sterilized in hot water, cook the marinade in a saucepan from the amount of pure water, spices, salt and sugar specified in the recipe.
step 4 out of 6
Pour citric acid with a teaspoon directly into the jar.
step 5 out of 6
Cook the boiled marinade over low heat for a couple of minutes and pour it into a jar of tomatoes. We immediately close the jar tightly with a lid and check the tightness of the seaming.
step 6 out of 6
Then we put it on the lid, cover it with a warm blanket and, after cooling completely, transfer it to storage in a dark, cool place: a pantry or basement.
Happy and tasty preparations!
