Tomatoes with citric acid in liter jars

Citric acid is a great alternative to table vinegar, which has a pungent smell. Citric acid rolls retain their original taste and acquire a slight sourness. Today we will be preparing tomatoes with citric acid with the addition of a sprig of tarragon, which gives the tomatoes a fragrant aroma and subtle tart notes.

We wash the tomatoes under running water, put them on a cotton towel and let them dry a little. We pierce each tomato with a toothpick in the area of the stalk so that they do not crack during the process of scalding them with boiling water.

Since we will carry out the process of pickling tomatoes by double pouring boiling water, it is enough to rinse the tomato jars with baking soda and rinse well. At the bottom of the cans we spread on a sprig of tarragon, clove buds and allspice.

Then put the tomatoes in the jars.

After the allotted time, put on the lid with holes on the jars and pour the water back into the pan.

Turn the jars upside down and leave at room temperature until they cool completely. Then we put them away for storage in the basement or pantry.
