Tomatoes in the snow with citric acid

Spicy, juicy tomatoes with garlic "snow" are an excellent appetizer for hot meat dishes. You can prepare such tomatoes with both vinegar and citric acid. In this recipe, we use the second option. Garlic can be chopped with a knife or rubbed on a fine grater. By the way, it is grated garlic that looks more like snow and visually fully justifies the name of this conservation.

Banks are pre-washed with soda solution and sterilized in any convenient way. I also wash the lids, boil in water for two minutes and dry. We wash the tomatoes from dirt. Wash the greens and dry them. Put the prepared tomatoes tightly in clean jars, shifting them with dill and parsley. Fill the tomatoes with boiling water and let stand for ten minutes so that the fruits are steamed and partially sterilized. After the specified time, we drain the water from the cans.

Peel and wash the garlic. We rub the teeth on a grater or chop with a knife. Place the chopped garlic in jars right on top of the scalded tomatoes.

To prepare the marinade, pour water in the specified amount into a saucepan, add salt, granulated sugar and bay leaf. We put the container on the stove and heat to a boil. We boil for two to three minutes. At the very end, add citric acid and stir vigorously.

Fill the tomatoes with garlic in jars with boiling marinade. We immediately roll up the lids and cover with a warm blanket. Cooling slowly, the seals will go through the final sterilization stage. When the jars are completely cool, they can be stored in a cool, dark place.
