If you have already managed to cook tomato rolls for the winter and you still have soft tomatoes that are not suitable for preservation, be sure to cook the tomatoes in your own juice. These tomatoes can be prepared with or without vinegar. I suggest cooking tomatoes in your own juice without vinegar.

Select tomatoes that are strong and about the same size. Rinse thoroughly under cold running water, dry. Prepare the jars, wash thoroughly and sterilize in the microwave, water bath, or oven. Put the lids in a saucepan, cover with water and boil for about 10 minutes. Fill sterile jars with prepared tomatoes.

Thoroughly rinse soft tomatoes, dry, cut in half, stalk and mince or chop with a food processor or blender.

Pour chopped tomatoes into a saucepan, add granulated sugar, bay leaf, black peppercorns and salt. Place on medium heat. Bring to a boil, cook for about 10-15 minutes, stirring occasionally and skimming off the resulting foam. As soon as foam stops forming, immediately remove from heat.

While the filling is cooking, fill the jars with tomatoes with pre-prepared boiling water and cover with lids.

When the fill is ready, carefully drain the water and fill with the boiling fill.

Tighten the jars with sterile lids. Turn hot jars with tomato appetizers in their own juice upside down, wrap them in a warm blanket and leave them cool for about a day. Then turn over and move the jars to a cool, dark place for storage.
