Bulgarian-style tomatoes in their own juice

Tomatoes in their own juice are the most natural and delicious way to preserve tomatoes. Small, dense tomatoes keep their shape perfectly and are soaked in salt and spices, which are added to tomato juice.

Ingredients

Cooking process

step 1 out of 7
Select ripe, dense tomatoes, wash them, on each vegetable near the stalk, make a puncture with a toothpick. This will keep the tomatoes in shape during the cooking process.
step 2 out of 7
Wash the bell pepper, clean it from partitions and seeds. Grind the pulp in any way you can in a puree.
step 3 out of 7
Wash horseradish root, peel and chop until puree. Peel the garlic and pass it through a press.
step 4 out of 7
Put the tomatoes in clean sterilized jars, pour boiling water over the jars and leave for 10 minutes.
step 5 out of 7
Pour tomato juice into a separate saucepan, add chopped horseradish, garlic, bell pepper, sugar and salt. Bring the juice to a boil and then cook for 3-5 minutes.
step 6 out of 7
Drain the jars and pour hot tomato juice over the tomatoes instead.
step 7 out of 7
Roll up the jars with lids, leave them to cool under a warm blanket. Store sewing in a cool, dark place.

Bon Appetit!
