Walnut muffins are always delicious. Especially if you add more coffee and prunes. This combination will leave few people indifferent. It is especially valuable in such a cupcake that it is lean. You can afford these baked goods during the fast. To enhance the nutty flavor, it is recommended to fry the walnuts with a pinch of salt and a slice of butter before adding to the dough. And prunes - soak briefly in warm water.

Let's deal with walnuts. Chop them coarsely with a knife and pour into the pan. We put on the stove and, while stirring, fry until a pronounced nutty aroma appears - literally two minutes. When the nuts become hot and begin to lightly brown, add the specified amount of butter to them, stir so that it melts and evenly covers all the nuts. Sprinkle with a pinch of salt on top, mix and transfer to a plate to cool. Pour the cooled nuts to coffee, add soda.
Sift the flour and add it to the coffee-nut mixture. Stir until smooth, breaking all the lumps. The dough is obtained in consistency, like thick sour cream. We wash the prunes, pre-soak them for ten minutes, then squeeze them out with our hands and cut them into small pieces. Pour the prunes into the dough, mix.
Preheat the oven to a temperature of 180 degrees. Grease the baking dish with a small amount of odorless vegetable oil and sprinkle with flour. If the mold is silicone, no lubrication is required. We spread the prepared coffee-nut dough into the prepared form. We put the dish in the oven on the middle level and bake for twenty five to thirty minutes. By the end of baking, the cake will slightly increase in volume and lightly brown. You can also check the readiness with a toothpick: if it comes out of the cake dry, then you can already get it out of the oven.
