Lean Lemon Cupcake

Lemon muffins are baked goods that are very popular in winter. A moist, aromatic cupcake will perfectly complement a festive dinner or an everyday family tea party. It is easy to prepare, easy to mix, does not require thorough beating.

We take a beautiful large lemon and wash it thoroughly. Wipe dry. Cut into pieces. Remove all bones and grind with a blender. We bring the total weight of the lemon mass to 270 grams with ordinary boiled water.

We take a deep container and mix sugar with vegetable oil in it.

Add our lemon mass and vanillin to the resulting mixture. Mix well.

Pour baking powder into a container and mix gently. Our cake blank will turn white, boil and expand.

Sift the flour immediately into a bowl, in which we knead the dough, and mix everything again.

Lubricate a baking dish with vegetable oil, transfer the dough into it, level it and put it in the oven, preheated to 180 degrees. We bake for about 50-60 minutes. Turn the finished cake together with the form onto the wire rack and cool for 10 minutes. Then remove the mold and place the cupcake on a serving dish.

While the cake is cooling, prepare the icing for decoration. Pour icing sugar into a small bowl and mix it with lemon juice. Add the juice in parts. Decorate the cake with icing and serve. Enjoy your tea!
