Lean vegetable oil carrot cake

Absolutely simple recipe for carrot cake, which, moreover, is also lean. The liquid base of the dough is peach juice and vegetable oil. Dry additives - flour, baking powder, sugar, walnuts and grated carrots. We mix everything together and send to the oven. Be sure to cool the finished cake before serving. Such a cake can be served as an independent baking, as well as cut into a couple of cakes, layered with any cream and decorate as a cake.

We sort out walnuts from accidental impurities. Fry them for a couple of minutes in a pan with stirring until a pronounced nutty aroma appears. Also, nuts can be processed in the oven at a temperature of 200 degrees, for several minutes. Pour the fried nuts on a plate and let them cool.

Pour odorless vegetable oil into a separate bowl and add granulated sugar with vanilla and a pinch of salt. We rub everything together with a spoon.

Pour peach juice with pulp into the sugar-butter mass, mix.

Peel the carrots from the upper skin, rinse and dry. We rub it on a fine grater.

Put the grated carrots in a bowl to the liquid mixture with juice, mix. Chop the cooled walnuts with a knife or grind with a blender. Set aside several nuts whole to decorate the finished cake. It is not necessary to grind the nuts into small crumbs, large pieces should remain, which will then be caught on the cut of the cake. We mix.

Lastly, sift the flour along with the baking powder and pour it into a bowl with a liquid carrot mixture. Mix everything together with a spatula until a homogeneous dough is obtained.

Preheat the oven to a temperature of 200 degrees. Grease the baking dish with a small amount of odorless vegetable oil. Alternatively, you can line the pan with oiled parchment to make it easier to remove the finished cake. If the mold is silicone, then you do not need to lubricate it. We spread the carrot dough in the prepared form. We put the form with the dough in an already hot oven on the middle level and bake for forty to forty-five minutes. The product will brown well, will not rise much, and will begin to emit a pleasant aroma. At the end of baking, we check the cake with a toothpick, sticking it into the middle: if the stick comes out dry, then baking can be completed.

We take the finished cake out of the oven and carefully remove it from the mold. Place it on a wire rack to cool down so that condensation does not form.
