Lean apple muffin

Delicate apple muffin that requires a minimum of ingredients. Flour, semolina, sugar, baking powder, cinnamon and, in fact, apples - as you can see, the recipe is lean. In order to make the apple flavor more versatile, we suggest adding poppy seeds, nuts and honey to the specified basic set of ingredients. It is advisable to choose apples that are dense, with firm juicy pulp.

We wash the apples, dry them, cut each into four parts. Cut off the peel and remove the seed pods. We rub apples on a coarse grater. Preparing the nuts. By the way, they can be any, to taste - walnuts, almonds, cashews. We chop them into large pieces.

In a bowl, mix the dry ingredients: sift the flour, add semolina, cinnamon, baking powder and granulated sugar. Mix everything together until smooth.

Put poppy seeds and chopped nuts into the mass of grated apples. We mix everything together.

Preheat the oven to a temperature of 180 degrees. Grease the baking dish with a small amount of odorless vegetable oil. If the mold is silicone, no lubrication is required.

We spread a few tablespoons of the resulting dry mixture into the prepared form. Flatten it into a flat layer and place a few tablespoons of apple mass on it. We align. Water the apples with a small amount of liquid honey. If the honey is solid, preheat it in the microwave. Then put a layer of flour mixture again and cover it with grated apples. Thus, we alternate layers and form a cupcake. The final layer should be in the form of a dry mixture, and not too thick, otherwise the baked crust may turn out to be rough.

Place the cake pan in the oven on a medium level and bake for forty-five to fifty minutes. By the end of baking, the cake should be visibly browned on top. We take the cake out of the oven, cool it right in the mold. When warm, cover the surface of the cake with a thin layer of apricot jam.
